Omstaan Sauvignon Blanc 2022

A yellow tint Sauvignon Blanc with notes of oak on the nose that are followed by hints of gooseberry and passionfruit. A mouthful of this beautiful wine tends to be a lushfull concentrate of tropical fruit with a long oaky finish.

Grapes are harvested at 21 to 21.5 brix by machine early in the morning to deliver as cool as possible at the cellar.

Grapes are protected against oxidation by SO2 and CO2 from offloading to pressing. Only free run juice are used for the Omstaan range, the juice are floated and racked, only selected yeast are used for fermentation at 16 degrease celsius.

After two to three days of fermentation the wine is racked to 300 lit French and American oak barrels where fermentation was finished and the wine was left on the leese for six months before bottling.
