The Hedgehog Sauvignon Blanc

An easy drinking Sauvignon Blanc, with a light yellow and green color and notes of guava, gooseberry and passionfruit.  This wine is well balanced with a hint of tropical fruit and a mineral finish.

Grapes are harvested at 21 to 21.5 brix by machine early in the morning to deliver as cool as possible at the cellar.

Grapes are protected against oxidation by SO2 and CO2 from offloading to pressing. Only free run juice are used for the Hedgehog range, the juice are floated and racked, only selected yeast are used for fermentation at 16 degrees.

After fermentation the wine is racked and left on the leese for as long as possible before bottling.
