Handpicked and sorted in the vineyard during the cool morning hours at  the end off January at optimum ripeness for the development of high levels of thiols.

Worked as reductively as possible and only free run juice was used. Settled for 48 hrs and light lees taken with racking. Inoculated with yeast and allowed to ferment @ 16Celsius. After fermentation left on fine lees (stirred up every two weeks) until bottling.
