Harvest by hand at the right correct ripeness to prevent a green vegetive taste and nose and enhance the cherry and fruit flavours.
Our Cape Ruby consist of 80% Ruby Cabernet and 20% Shiraz.
Fermentation on skins until 10 degrees sugar are fermented out and then fortified 30% aged in used barrels for 12 months the res aged in tanks for 12 months.
